Crocin is the principal coloring compound isolated from saffron. It is used for its strong natural color contribution and functional properties in formulations where controlled composition and natural origin are required.

Physical and Chemical Properties

  • Coloring: The most important characteristic of crocin is its intense golden-yellow color. This color is due to its molecular structure, which absorbs light at specific wavelengths.
  • Solubility: Crocin is soluble in water (which is why saffron colors water). It is also partially soluble in some polar organic solvents such as ethanol.
  • Instability of Crocin: Crocin is sensitive to light, heat, and oxygen, and may decompose when exposed to them. Therefore, saffron and products containing it must be stored carefully.
